Since I am technically a "new" player and the Knight class is restricted to me until level 7, can I buy proficiencies and the like upon character creation, or since my intent is to be a knight, do I have to refrain from purchasing the skills?

If your goal is to become a Knight, you'll be starting off as a Warrior and may purchase any and all Warrior skills at Warrior cost until such time as you find a teacher in-play that will permit you subclass to Knight, at around 7th level.  Just so you don't have to respend anything later, it might be a good idea to just stick with weapon skills, slays, and proficiencies until that time.

Can skills be grandfathered in, so long as the code doesn't prohibit it?

Or to give an example.  McBashy the warrior has read magic, and then fufill's a teacher's requirements to become a knight.  Will read magic have to be sold back?

Absolutely not, any skills a Knight is prohibited from having until he is a Full Knight must be respent at time of subclassing.

This makes perfect sense, but if the Knight, upon reaching Full Knight status, wants to re-purchase that skill may he do so?  Or is this the same as selling back skills and once sold back you may never have it again?

He may re-purchase any non-prohibited skill once he reaches full Knight (or Ranger or Dark Knight) status as he was forced to respend the Build Points and did not willingly sell back the skill.
